Easy to prepare, nutrient dense spinach soup. This fibre – rich, low fat soup is suitable for diabetics and for people with weight issues.

Ingredients
- Spinach – 3 cups, shredded
- Onion – ½ cup, chopped
- Low Fat Milk – 1 cup
- Garlic – 1 tsp, grated
- Olive – 1 tsp
- Freshly ground black pepper – to taste
- Salt – to taste
- Water – 1.5 cups
Method
- Heat 1 tsp olive oil in a deep non-stick pan. Add 1 tsp grated garlic and ½ cup chopped onion. Saute on a medium flame till the onion turns translucent.
- Add the shredded spinach and saute on a medium flame for 2 mins.
- Add 1.5 cups water, mix well and bring to boil. Stir in between.
- Allow the mixture to cool and then blend into a smooth texture.
- Transfer the mixture into a deep non-stick pan. Add 1 cup low-fat milk, salt and freshly ground black pepper. Mix well and cook on a medium flame for 2 mins. Stir occasionally.
- Serve hot.
