Low Calorie Spinach Soup

Easy to prepare, nutrient dense spinach soup. This fibre – rich, low fat soup is suitable for diabetics and for people with weight issues.


  • Spinach – 3 cups, shredded
  • Onion – ½ cup, chopped
  • Low Fat Milk – 1 cup
  • Garlic – 1 tsp, grated
  • Olive – 1 tsp
  • Freshly ground black pepper – to taste
  • Salt – to taste
  • Water – 1.5 cups


  • Heat 1 tsp olive oil in a deep non-stick pan. Add 1 tsp grated garlic and ½ cup chopped onion. Saute on a medium flame till the onion turns translucent.
  • Add the shredded spinach and saute on a medium flame for 2 mins.
  • Add 1.5 cups water, mix well and bring to boil. Stir in between.
  • Allow the mixture to cool and then blend into a smooth texture.
  • Transfer the mixture into a deep non-stick pan. Add 1 cup low-fat milk, salt and freshly ground black pepper. Mix well and cook on a medium flame for 2 mins. Stir occasionally.
  • Serve hot.
