A healthy soup made from a combination of vegetables like tomato, onion, capsicum and cabbage which are pressure cooked. It can be had for lunch or dinner

Ingredients
- Tomato – 1.5 cups, roughly chopped
- Onion – ¼ cup, roughly chopped
- Cabbage – ½ cup, roughly chopped
- Capsicum – ¼ cup, roughly chopped
- Oil – 2 tsp
- Salt – to taste
- Freshly ground black pepper – to taste
Method
- Heat 2 tsp oil in a pressure cooker. Add the chopped onions and saute on a medium flame for 1 min.
- Add the chopped tomato, cabbage and capsicum. Saute on a medium flame for 2 mins.
- Add 1.5 cups of water and mix well. Pressure cook for 3 whistles. Once the pressure settles, set aside and let it cool.
- Transfer the cooked vegetables into a mixer jar. Blend it into a smooth mixture.
- Transfer the mixture into a deep non-stick pan. Add the salt, freshly ground black pepper and mix well. Stirring occasionally, cook on a medium flame for 2 mins.
- Serve hot.
