Tofu Salad

This delicious vegan salad is packed with crispy vegetables and protein rich tofu topped with mixed herbs. The mixed herbs, sesame and tangy lemon dressing makes it tastier.  Tofu is very low in fat and calories making this salad an ideal weight loss dish

Ingredients

  • Tofu – 100g
  • Sorghum – 2 tbsp
  • Moong Sprouts – 2 tbsp
  • Tomato – 1, diced
  • Carrot – 1, diced
  • Olive Oil – 1 tsp
  • Mustard Seeds – ½ tsp
  • White Sesame Seeds – ½ tsp
  • Mixed Herbs – 1 tsp
  • Turmeric Powder – ¼ tsp
  • Rock Salt – ½ tsp
  • Roasted Cumin Powder – ½ tsp
  • Coriander Powder – ½ tsp
  • Lemon Juice – 1 tbsp
  • Vinegar – 1 tsp
  • Oregano – 1 tsp
  • Baby Spinach Leaves – 7
  • Curry Leaves – 1 sprig

Method

  • Boil 2 tbsp sorghum for 10-15 mins.
  • In a pan, heat 1 tsp olive oil. Add ½ tsp mustard seeds, a few curry leaves, ½ tsp white sesame seeds and 1 tsp mixed herbs.
  • Add diced tofu and saute on low flame until they turn crispy.
  • Add ¼ tsp turmeric powder, ½ tsp rock salt, ½ tsp roasted cumin powder, ½ tsp coriander powder, diced tomato and diced carrot. Toss well.
  • On top add dressing of 1 tbsp lemon juice and 1 tsp vinegar and toss well
  • Add cooked sorghum and moong sprouts. Stir well.
  • Add a few baby spinach leaves and 1 tsp oregano. Stir well.
  • Serve hot.
