This healthy egg salad is prepared with boiled eggs and lots of veggies. It can be had as a meal. It also goes very well in sandwiches and roti rolls
- 3 boiled eggs
- 1 small onion chopped
- ½ cup shredded cabbage
- 1 small carrot grated
- 1 green chilli chopped
- Handful of chopped coriander leaves
- Black pepper powder
- Salt as needed
- ½ to ¾ tsp chaat masala
- In a mixing bowl, add the chopped onion, shredded cabbage, grated carrot and chopped green chilli.
- Give a good mix.
- Add the cubed boiled eggs, sprinkle black pepper powder, salt and chaat masala.
- Add the chopped coriander leaves. Cover the bowl and gently toss the salad.
- Serve immediately.
