This salad is good for a side dish or a meal on its own. They pair with just about any main dish

Ingredients
- ¾ cup chopped cucumber
- ½ cup chopped carrots
- ¼ cup chopped onions
- ¼ cup chopped tomato
- ¼ cup chopped beetroot
- ¼ cup shredded cabbage
- ¼ tsp crushed black pepper
- Salt – a pinch
- 1 tbsp lemon juice
- 8-10 Mint leaves – finely chopped
- 2 tbsp Coriander leaves – finely chopped
Method
- In a mixing bowl, add all the prepared vegetables, mint and coriander leaves. Add salt, lemon juice and crushed black pepper. Toss them well.
- Serve immediately.
